If it is the mechanic who does the shuffling, how will you know that the cards are really turned random?

It is a big mistake to think the the dealer will never be involved in cheating. On the contrary, the dealer collaborating with a player is probably the most common cheating. The dealer helps the player win and gets his share of the money.

I would never use a deck for poker if the card backs can look either "rightside up" or "upside down" if turned in the deck, for the above mentioned reasons. It would also never be allowed in a casino, and possibly could cause concern to a new player to your game that sees such a deck ( New player may not vocalize his/her concern, but may not fully "trust" the game) ...
