I feel like the best way to set up a blind structure is to start at the end and work backwards. My general rule is that, at the latest, the last blind level will have a big blind that is ~equal to 10% of the average stack heads up. So I make a rough estimate of how many chips total there will be once all rebuys and add-ons are completed, and simply divide that number by 20. It always has good timing and I get a lot of compliments.

I like deep stack for the most part, but I don't want games to be too long. I like to have everyone be able to play for most of the game so that they have a good time, but people still need to lose so there will be a winner. So in my game, almost all the players (ranges from 10-20 people) get to play for most of the game for a solid 2.5-3 hours, and then the final table usually is fast (1-1.5 hours) because the blinds are faster at that point. Another challenge is to maximize rebuys (bigger prizepool), so you need the blinds to be fairly big while rebuys are still available, but not too big. This is my structure:

15,000 chips starting stack, unlimited rebuys for same stack. 1 optional add-on per person (10,000 chips)

25 minute blinds

25-50
50-100
100-200

Break, chip up

200-400
400-800
600-1200

Rebuy period ends
Break, chip up, add-on

15 minute blinds

1000-2000
1500-3000
2500-5000
4000-8000
6000-12000
10000-20000

4 hours of play at this point, about a 5 hour game with breaks + combining tables. Rarely 1-2 more blinds, if necessary.
15000-30000
25000-50000

My last game started with 11 people, 6 rebuys, 3 add-ons, for 285,000 total chips, and ended shortly after the 10000-20000 blind level starts.

i dont like the fact the first several levels the blinds double every time

Given a fixed amount of time, longer levels leads to bigger jumps.
