As for my table preferences, I really like a racetrack. It feels like a more stable place to stack my chips (even though a good foam beneath the felt is fine). And I keep my cards up on the felt, so it's never a problem to look at them. I also like my racetrack to be at least 3 standard chips wide. (if it's too skinny, it seems useless.)
I do not like drink holders on the table at all. I think it interferes with the look of the table, it limits the seating arrangement to some degree (great if a full ten are playing, you know exactly where to put them... but you get a smaller game or need to throw one more person in...), it takes up valuable chip stacking space and increases the opportunity for spills. If I'm shelling out the money for a good table, I'm also buying TV trays and setting them around the table for drinks.
Lighted rails are cool, but then you also have to deal with wires and such.
It really seems like everybody likes something different. So the ability to offer a couple key options might be the way to go. If you know the table is a quality build, and you can get it with or without cupholders, then you can get exactly what you want. Although, that may be more of a challenge from your end in terms of production.

Table preferences = Non race track for playing purposes. Race track cause they look cool.
No drop in cup holders, if you have to have them slide unders i think would work best. Allows people to put them somewhere they are less likely to knock there drink over.
A nice cloth my preference would be unsuited.
Rail with lots of cushion.
And most importantly a mostly 5 inch rail all the way around.

Legs - Fold up all the way. In our retail experience - just about every aspect of a fold up leg table is better and more welcomed by consumers. Fold up legs are unbeatable in versatility and weight. And not to mention - add a skirt to the support frame of the table and you have a "fixed" look at half the price. Statistically, 90% of our customers buy folding legs as compared to "casino style" legs. Well, cost probably has alot to do with it... folding legs cost $20... a good pedestal with a stretcher from Rockler costs hundreds... Playing surface foam - the thicker the better. I have found volara to be too bouncy...but headliner is too thin... For my last table, I put headliner over the volara... The volara gives you the firmness...the headliner deadens the jump... Perfect solution, IMHO. The removable dealer space is a crazy idea! - I love it. Quads already did it...

Border States are all good! We all know that the style of a poker table depends on its owner, and that's the beauty of the market. That hide away dealer section is a great idea, if we build it, I'll give one away.
Wedge - We specialize in consumer-level poker tables, so you're right, there are many factors to consider that custom builders don't necessarily need to worry about. But the versatility of the folding leg cannot be ignored, we have a lot of customers with the "W" factor. Wives usually love it when the poker tables are able to disappear instantly.

What I had more in mind was along the lines of something like a dining table leaf that you add when you need more space, remove when you don't. (Sorry, didn't finish my thought). The benefit of this concept, in my mind anyway, is that you wouldn't see the gap for the dealer (the part that's not padded) because when you have the insert attached, the whole thing is padded as if it were one piece. When you remove the "leaf", that's when the dealer gap would exist. I don't know if it can be practically done, as I don't know from tables or building, but that's my vision fwiw anyway.

Yes I would love to win a table
My idea for a perfect table would be true oval table or egg shaped if you would like. I also don't like drinks on my table, however I would to see pull outs for drink holders. I love the look of a racetrack but not practical for me. I like felt under my cards. I'm suggesting a racetrack with only 1/4 inch foam and 1 inch foam for the playing field. In differnt colors of course, like tan and brown.
If you decide to build this table I do hope that you would name it after me.
