I'm struggling with adjusting my usual game for the early and perhaps middle stages of sit-n-go's at the moment, and I understand the reasoning behind it, not wanting to take too many risks until you have to, but I seem to be getting confused with the practice, so as ever I'm looking for some insight ?

for instance hands like AJ / AQ, I would normally open with a raise pre-flop, but early in a tournament, say the first 4, maybe 5 levels should I just limp and take a look at the flop, abstractly that sounds wrong, but if its the right thing to do early in a tournament, I'm not sure?

similar situation on the flop, with hands like AK / AKs, and maybe AQ, I'll raise on the flop when I miss depending on the texture, to see where I'm at and maybe win the pot right there, is this too risky until later on in a tournament ?

nothing else comes to mind at the moment but I'm sure there are other nuances to this philosophy that I could do with help on.

I'll usually limp with AQ early (unless I'm in late position and it's unopened, but I'll usually fold AJ in early position (unless it's suited and the table is passive, in which case I'll probably limp), but will occasionally raise with it in late position if I can open.  I try not to get too deep with AJ though, unless the blinds are big, in which case I will at times risk my stack with it (depending on the situation.)  However, I would suggest not betting the flop when you miss with AQ or AK unless you raised coming in and are now making a continuation bet.  And make sure you size your bet well when you do this (avoid better either too much or too little in this spot:  about half to two-thirds of the pot is usually about right here, depending on you table.)
